Instant Pot: A squash soup

I like autumn. Plenty of nature’s gifts, and among them the beautiful squash.
I always supply enough squash that we have for the whole winter.
You can also cooked it in a classic pot.

Ingredients
  • 1,5 kg of cleaned squash
  • 4 potatoes
  • 2 onions
  • 1 sweet potato (optional)
  • 1-2 cloves of garlic
  • 2 liters of water
  • Spices as desired: salt, pepper, hot pepper
Directions
  • Step 1 Peel the squash, remove the skin and cut into cubes. Peel the onions, potatoes, and sweet potato and cut into cubes. Clean and chop the garlic.
  • Step 2 Put everything in the Instant pot and add water. Season as desired (I add only salt, but we like it that). Close the pot and set “manual” to 5 min.
  • Step 3 Let 10 minute Natural Release Pressure. After 10 minutes, cover the valve with a cloth and move the valve with spoon in venting position.
  • Step 4 Before mixing, remove a small amount of fluid in the container. Add the liquid if necessary if the soup is thick.
  • Step 5 Blend with stick blender. Try and add more spices if needed. Serve with sprinkled pumpkin seeds.
  • Step 6 Additional advice: If you are in a classic pot, put all the food into the pot and cook for 30-35 minutes. When cooked, go to step 4.
